Take-In Thursday ~ Tropical Tabbouleh



This week we thought we would provide you with a recipe you can bring to picnics or outdoor BBQs. It is a spin on tabbouleh. If you don't like one of the ingredients, substitute it for something you do like :)

Tropical Tabbouleh
serves about 4
Ingredients
2 cups cooked and cooled wheat berries
1 cup firmly packed chopped fresh parsley
1/2 cup chopped fresh mint
3 scallions, sliced
3 tablespoons lime juice
2 tablespoons extra-virgin olive oil
1 cup diced mango
1 cup diced tomatoes
1cup canned black beans, rinsed and drained
1/4 teaspoon allspice
Salt and ground black pepper to taste
 
Directions: In a medium bowl, combine all of the ingredients except salt and pepper. Toss well, then season with salt and pepper and serve.
