Vegetarian Meat Pie
This week's Take-In Thursday is a vegetarian recipe inspired from the Spartan Food Of The Day post. We have made a few adjustments to it. We hope you enjoy it!
Vegetarian Meat Pie
servings ~ 10Ingredients: Spice Mix: 3 whole eggs 3 Tbs olive oil 1 cup cooked lentils 1 Tbs paprika 1 tsp ground black pepper 1/2 tsp red pepper flakes 1 tsp chili powder The pie: 1 Tbl olive oil 4 cloves garlic 1 medium white onion 1 Tbs soy sauce, low sodium 12 oz can of tomatoes 1 cup vegetable broth, low sodium 3 cups cooked lentils 2 medium potatoes, cubed and steamed 4 Tbl of the spice mix from above Directions: 1. Preheat oven to 350F 2. Steam potatoes and set aside 3. Put all of the spice mix into a food processor or blender and blend. Then set aside for later. 4. Place 1 Tbs olive oil in a Sauce pan and heat at med-high heat. Add the garlic and onion and stir 2-3 minutes 5. Continue to add ingredients from the ingredient list mixing well. 6. Cook for 5 minutes and then add the spice mix stirring well. 7. Place in a glass oven-safe baking dish and spread potatoes on top . 8. Bake in oven for 45 minutes . 9. Serve dish. | | ||
