Take-In Thursday ~ Garlic-Ginger Seared Scallops
serves about 4
Ingredients:
1 Lb. large sea scallops
2 cloves of garlic, minced
1 Tbs fresh ginger root, minced
2 Tbs olive oil
1 tsp parsley, dried (or 1 Tbs fresh parsley, finely chopped)
coarse ground black pepper
kosher salt
Directions:
1. Heat skillet over medium-high heat until pan is hot.
2. Place olive oil in the pan and once oil is hot, add scallops to the pan. Sprinkle a pinch of kosher salt and black pepper over the scallops. Let them cook until the scallops are over halfway translucent and pan side of scallop is golden brown.
3. Flip scallops and finish cooking scallops allowing other side to brown. At this time, add the garlic, ginger and parsley to the pan.
4. Once the scallops have finished cooking, take them off the heat and and serve.
