We hope everyone enjoyed the holiday! We know that many people took vacation days so the celebrating could continnue throughout the weekend. With holidays, come parties and picnics, so we wanted to share some of our 4th of July recipes to bring to picnics.
Flag Fruit Salad ~ serves 10 people
2 cup Blueberries
2 cup Strawberries, quartered
3 Tbs lemon juice
mint leaves to garnishDirections:
In a large bowl, stir together all the fruit and the lemon juice. Place the mint leaves in the bowl and keep refrigerated until ready to serve.
WhiteBean-tomato salsa ~ serves 10 people
15-oz white beans, rinsed and drained
15-oz kidney beans, rinsed and drained
3 cups tomatoes, diced
1 cup red onion, finely diced
1/2 cup purple bell pepper, diced
1/2 cup red bell pepper, diced
3 Tbs fresh cilantro, finely chopped
2 Tbs lemon juice1 tsp olive oil
1 tsp hot sauce
salt & pepper to taste
1 large bag of blue corn chips
Directions:
1. Mix all the ingredients in a large bowl until everything is evenly distributed. Add in anything else you might like. Refrigerate until ready to serve.
2. Serve with blue corn chips
