Today is Thursday!!! Just one more day until the weekend begins. Today's recipe for the week is a zucchini quiche that has a wheat germ crust. We hope you find it as tasty as we do!
Today's Recipe:
Zucchini Quiche
Ingredients:1 lb. zucchini squash
2 Tbsp dry sherry
¼ lb. Mushrooms
1 tsp. basil
1 large onion
1 tsp. thyme
2 cloves garlic
1 tsp. oregano
2 Tbsp olive oil
1 tsp. ground ginger
3 eggs
¼ tsp. salt
1 cup grated reduced fat cheddar
1 cup grated part-skim mozzarella cheese
Dash pepper
Wheat germ
Directions:1. Preheat oven to 325º.
2. Wash vegetables. Finely chop the vegetables and the garlic. Sauté in olive oil over
low heat briefly until just limp.
3. Add sherry and seasonings and remove from heat.
4. Beat eggs and add cheese; stir in vegetables.
5. Grease 9-in pie plate. Coat the bottom and sides with wheat germ. Pour in
vegetable mixture and sprinkle the top with wheat germ.
6. Bake in the oven for 30-40 minutes, until set and lightly browned. Remove and cool
for ten minutes before serving.
It is the perfect on a cold morning for brunch or on a chilly evening for dinner.
