Take-In Thursday ~ Hummus Anyone?

Hi Everyone!

We hope you had a blast trying yesterday's workout!

We are preparing for a big weekend this weekend with the New England Tough Mudder! We can't wait :)

Early this week, we experimented with a green pea hummus and it came out pretty well so we thought we would share it all with you.

Pea & Mint Hummus
Ingredients:
1 pound of frozen green peas, thawed
1 1/2 Tbs Lemon juice
1 Tbs Olive oil (extra virgin olive oil works well too)
1/2 tsp garlic powder
1 Tbs fresh mint, finely chopped
Salt and Black pepper to taste

Directions:
In a food processor, add the first 4 ingredients and blend until  it looks like a spread. Then add the mint and salt and pepper to taste.

Serve as a spread  on fish or meat or a dip with veggies and crackers.
