Take-In Thursday ~ Healthier Chocolate Chip Cookies





Hi Everyone!


Can you believe it is already Thursday!!!! The weekend is almost here :)

We know many people love cookies or need to make them for special occasions so we are providing a healthier recipe for you to try out! We hope you enjoy them!

Chocolate Chip Cookies

Ingredients:
1 cup packed brown sugar
3/4 cup trans-fat free margarine spread
2 large egg whites
2 tsp vanilla extract
15 oz chickpeas, drained and rinsed
4 oz dark chocolate chips
3/4 c chopped walnuts (optional)
2 cups whole wheat pastry flour
1/2 cup old-fashioned rolled oats
1 tsp baking soda
1/4 tsp salt

Directions:
1. Puree chickpeas in a food processor.
2. Beat sugar and margarine with an electric mixer until smooth.
3. Add egg whites, vanilla and chickpea puree and mix until evenly blended.
4. In a separate bowl add flour, salt, baking soda and oats. Stir until evenly distributed.
5. Add flour mixture slowly to the other mixture, blending with the mixer until a dough is formed.
6. With a wooden spoon, stir in the chocolate chips and walnuts.
7. Form the cookie dough into 1-inch balls and place onto lightly greased cookie sheets 2 inches apart.
8. Bake at 350F for 10-12 minutes or until golden brown. Do not overbake.
9. Cool on a cooling rack
