Take In Thursday ~ Fresh pasta!

Hi Everyone!

With fall in full swing, we thought you would all enjoy a homemade pasta recipe using butternut squash. You can make the pasta with any sauce you think would pair well - experiment and have fun trying different flavor combinations.

Winter Squash Pasta:

Ingredients:¾ cup frozen winter squash, defrosted
1 ¾ cup all-purpose flour
1 tsp. olive oil
1 pinch black pepper
1 pinch nutmeg
1 pinch garlic powder


Directions:1.  In a large bowl, combine squash with remaining
ingredients to form a soft dough.
2.  Turn out onto a floured board and knead until smooth and
pliable, about 5-10 minutes.
3.  Place in a bowl, cover with plastic wrap and let rest for 15 minutes.
4.  Shape and cook dough as desired. You can roll the dough out with a rolling pin and then hand cut the pasta if you do not have a pasta maker to roll and cut your pasta.


Lemon-Sage Brown Butter Sauce: (adapted from Cooking Light)
Ingredients:
3 Tbsp. salted butter
1 Tbsp. chopped fresh sage
1 Tbsp. fresh lemon juice
1/8 tsp. ground black pepper

Directions:
1. Melt butter in small skillet over medium-high heat.
2. Add chopped sage to pan; cook 1 minute or until butter is lightly browned.
3. Stir in salt, lemon juice and pepper.
4. Drizzle sauce over cooked pasta and turn pasta gently to coat all strands.
