Take-in Thursday ~ Shrimp Saute


Happy Thursday!

We are hoping everyone is enjoying the week so far. We would like to provide you with a quick and easy dish to make over the holidays. This week's recipe is a shrimp dish that we think is something that is easy and delicious.    

Tomato Shrimp Saute
about 6 servings

Ingredients:
1 shallot, minced
2 cloves of garlic, minced
2 green onions, thinly sliced
2 medium tomatoes, diced
2 Tablespoons fresh lemon juice
1/4 cup white wine
1 Tablespoon fresh parsley, finely chopped
1 1/2 pounds uncooked medium shrimp, peeled and deveined
2 Tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper

Directions:
1. In a 10-inch skillet, heat olive oil over medium heat.
2. Add shrimp and shallots for 2 minutes. Now add remaining ingredients stirring frequently until shrimp is pink and opaque (about 3 minutes).
4. Remove from heat and serve with your favorite vegetable and side dish.

We recommend serving over whole wheat pasta and wilted spinach. Please let us know how you like the recipe and what creative ways you changed it.
