Take-In Thursday ~ Quinoa Lasagna


 


This week's recipe is a dish that traditionally wouldn't call for quinoa. We hope that providing you with new and creative ideas, you may be inspired to try something different in your usual recipes. 


Quinoa Lasagna
adapted from Eating Well March/April 2013
8 servings | Active Time: 45 minutes | Total Time: 1 1/2 hours

 

 

 

Ingredients:

2 cups water
1 cup quinoa
2 Tbs olive oil
1 cup onion, chopped
1 cup mushrooms, chopped
1/2 cup red peppers, diced
2 cups low-fat cottage cheese (no salt added)
1 egg, beaten
1 tsp dried basil leaves
1 Tbs dried oregano
1/2 tsp crushed red pepper flakes
2 cup thinly sliced zucchini and summer squash
3 cloves of garlic, minced
3 cups tomato sauce , low-sodium
2 cups packed fresh spinach
1 1/2 cup shredded part-skim mozzarella cheese

Directions:

1. Coat a 9 x 13" baking dish with cooking spray and preheat oven to 350F.
2. In a medium saucepan, combine water and quinoa and bring to a boil. Once it boils, reduce to a simmer and cook for about 15 minutes. After the quinoa is cooked, spread it evenly in the baking dish.
3. In a large skillet, heat the oil at medium high heat. Once the oil is hot, add the onion and cook until it begins to brown, about 5 minutes. Add peppers and mushrooms. Cook for 4 more minutes before adding the garlic, crushed red pepper and tomato sauce. Continue cooking,occasionally stirring until it sauce is hot.
4. In a medium bowl, combine cottage cheese and egg until well mixed. Stir in oregano and basil.
5. Spread one third of the sauce over the quinoa. On top of the sauce, form a layer of zucchini slices and then cover with the cottage cheese mixture.
6. Place half of the remaining sauce over the cheese mixture and layer the spinach over it. finish with the remaining sauce.
7. Sprinkle the mozzarella cheese on top and bake for about 35 minutes or until hot and lightly browned around the edges.
8. Let sit for 10 minutes before serving.
