Take-In Thursday ~ Pumpkin French Toast




As halloween approaches, we wanted to share with you a fun, festive breakfast idea with you.  We hope you enjoy it.


Pumpkin french Toast
serves about 6

Ingredients:
1 cup canned pumpkin
1 ½ cup unsweetened almond milk
2 Tablespoons cornstarch
2 teaspoon ground cinnamon
1 ½ teaspoon ground ginger
½ teaspoon ground cloves
1 teaspoon vanilla extract
8 slices of whole wheat bread
cooking spray

Directions:
1. In a large bowl, whisk pumpkin puree, almond milk, cornstarch, cinnamon, ginger, cloves and vanilla.
2. Dip one slice of a bread into the pumpkin mixture coating the bread evenly on both sides. Place the slice in a one-inch baking dish. Repeat with the rest of the bread slices. Pour the rest of the mixture over the bread slices and let sit for 10 minutes.
3. Preheat a large nonstick skillet over medium heat. Grease the pan with cooking spray. Place two slices of soaked bread and cook for five to seven minutes on one side. Flip the slices and cook for another 3 minutes or until golden brown on each side.
4. Place on a plate and cover with foil to keep warm while cooking the rest of the slices.
5. Serve and enjoy.
