Take-In Thursday

Hi Everyone!

Can everyone say Pumpkin? Today's recipes both involve pumpkin. We know Halloween is over but there are still many reasons to continue to use pumpkin! We are providing both a meal and dessert recipe for you today for you to try out. Please try the recipes and give us feedback on what you think :)

Today's Recipes:

Pumpkin-Black Bean Chili

Ingredients:1 tablespoon(s) extra-virgin olive oil
2 teaspoon(s) extra-virgin olive oil
1  medium-large sweet potato, peeled and diced
1 large onion, diced
4 clove(s) garlic, minced
2 tablespoon(s) chili powder
4 teaspoon(s) ground cumin
0.5 teaspoon(s) ground chipotle chile (see Note)
0.25 teaspoon(s) salt
2.5 cup(s) water
2 can(s) (15-ounce) black beans, rinsed
1 can(s) (14-ounce) diced tomatoes
4 teaspoon(s) lime juice
0.5 cup(s) chopped fresh cilantro

Directions:
1. Heat oil in a Dutch oven over medium-high heat. Add sweet potato and onion and cook, stirring often, until the onion is beginning to soften, about 4 minutes. Add garlic, chili powder, cumin, chipotle, and salt and cook, stirring constantly, for 30 seconds. Add water and bring to a simmer. Cover, reduce heat to maintain a gentle simmer and cook until the sweet potato is tender, 10 to 12 minutes.

2. Add beans, tomatoes and lime juice; increase heat to high and return to a simmer, stirring often. Reduce heat and simmer until slightly reduced, about 5 minutes. Remove from heat and stir in cilantro.

Chocolate-Pumpkin Bundt Cake

Ingredients
1 cup(s) all-purpose, flour
0.75 cup(s) whole-wheat pastry flour
1 cup(s) granulated sugar
0.75 cup(s) unsweetened cocoa powder, (not Dutch-process)
1.5 teaspoon(s) baking powder
1.5 teaspoon(s) baking soda
1 teaspoon(s) pumpkin pie spice
0.25 teaspoon(s) salt
1 cup(s) nonfat buttermilk
1 can(s) (15 ounces) unsweetened pumpkin puree
0.75 cup(s) dark brown sugar, packed
1  large egg, at room temperature
1  large egg white, at room temperature
0.25 cup(s) canola oil
0.25 cup(s) light corn syrup
1 tablespoon(s) vanilla extract
0.5 cup(s) packed confectioners' sugar
1 tablespoon(s) nonfat buttermilk
2 tablespoon(s) mini chocolate chips, or toasted chopped nuts (see Tips & Techniques)

Directions
1.To prepare cake: Preheat oven to 350°F. Coat a 12-cup Bundt pan with cooking spray.

2. Whisk all-purpose flour, whole-wheat flour, granulated sugar, cocoa, baking powder, baking soda, pumpkin pie spice and salt in a medium bowl.

3.Blend 1 cup buttermilk, pumpkin puree and brown sugar in a large bowl with an electric mixer on low speed. Beat in whole egg and egg white. Stir in oil, corn syrup and vanilla. Gradually add the dry ingredients, stirring until just combined. Transfer the batter to the prepared pan.

4.Bake the cake until a wooden skewer inserted in the center comes out with only a few moist crumbs attached, 1 to 1 1/4 hours. Let cool on a wire rack for 15 minutes. Remove from the pan and let cool completely on the rack, about 2 hours.

5.To glaze and garnish cake: Combine confectioners' sugar and 1 tablespoon buttermilk in a small bowl, stirring until completely smooth. Place the cake on a serving plate and drizzle the glaze over the top; garnish with chocolate chips (or chopped nuts) while the glaze is still moist.

Workout Wednesday ~ Challenge Accepted!

Hello Everyone,

We are eager to give you a fun workout for you to do today because we want you to have a great workout and feel great after you sweat a bit! We are thankful for the strength, agility and flexibility of our bodies and to show our gratitude we want to keep it strong and in shape and work hard!

Today's Workout:

Three 5-minute rounds of:
Sit-ups
Burpees
Dumbbell Push Press
Squat Jacks
Shuttle run

*Do each station for one minute and then switch as quickly as possible to the next. One minute rest between rounds

20-15-12-10 reps of:
Air squats
Burpees


*20 (each leg) walking lunges in between each rep set
21-15-9 reps of:
man makers (pushup-rows)
situps

*sprint in between each rep set 

AMRAP 6 minutes x 2
25M Bear crawl
Scissor jumps (16)
Skate jumps (16)
Push ups (10)

We hope you have fun with this workout - if you can, try to do the workout outside in the fresh air! Remember, you should always adjust intervals, reps and exercises based on your fitness level.

Motivational Monday



Hello Everyone!


Did everyone remember to turn their clocks back an hour? We hope you were allowed to get another hour of sleep or you increased your workout for an extra 60 minutes :)

For Motivational Monday today, we want to encourage you to think about what you are thankful for in your life. Much of the time, we are so preoccupied with all the items on our "to do" lists that we forget to stop and appreciate what is wonderful in our lives. Everyday conveniences become expected and needed even though years before they may not have existed. Have you ever felt lost when your cell phone battery dies and you are left without a phone for part of a day? Why is it that we must be connected to our email, texts and the Internet at all times? Less than 10 years ago, we would never have thought we would want to be connected all the time. It is only once we lose the ability to use it that we recognize its importance in our lives. Rather than waiting for Thanksgiving day, lets be thankful all month long to honor all of the amazing people and objects in our lives that support us. We challenge everyone to think about something different they are thankful for every day this week, write it down, share it with your family or friends and think about what your day would have been like without it.

One thing I am grateful for is the support and love of my closest friends. No matter what, they are there for me even if it is inconvenient for them. I can't imagine my life without them and I wouldn't want to! Sometimes we may take friends for granted and we need to make sure to express our gratitude for all they do to us. Who doesn't like to be appreciated for hard work and kindness. Act now because you never know when it will be too late.

Want to make it harder? Stay in the position for longer or hold a weight while sitting!

Weekend Warrior! Hello November!


Greetings Weekend Warriors :)

We hope you all have great plans this weekend and are getting outside to take in as much fresh air as possible! Winter may be coming but there is no reason why you can't still be outdoors! If it is chilly, wear layers and make sure you have a hat and gloves. This weekend we turn our clocks back which means you get an extra hour. We recommend you take advantage of that hour and get more sleep or an extra long workout! A fun thing that certain towns do is run a race right before the clocks turn back so your race time for the event is very short :)

Have fun with the weekend and do something different that challenges you mentally and/or physically!

Take-In Thursday ~ Blean Bean Burger

Finally Thursday has arrived! We hope you are all eager for the weekend and excited to know what the week's recipe is :)

The past two weeks have been themed Vegetarian/Vegan for the two of us and so we thought it would only be appropriate to share a vegetarian recipe with you.

Today's Recipe ~ Black bean Burgers & Salsa

Black Bean Burgers

Ingredients:
2 (14 oz) cans of black beans, rinsed
and drained
1 ½ T tahini
½ cup whole wheat bread crumbs
2 tsp cumin
1 ½ tsp dried oregano
¼  tsp cayenne pepper
1 tsp cinnamon
1 tsp ground ginger
1 tsp coriander
1/2 tsp chili powder
Salt and pepper
¼ cup fresh cilantro, finely chopped
3 T Vegetable oil
4 burger buns, or bread of choice

Directions:1. Pulse 1 can of black beans in a food processor with tahini, bread crumbs, and
spices until a coarse puree forms.
2. Transfer to a bowl and stir in cilantro and remaining beans.
3. Form mixture into 4 patties
4. Heat oil in a 10-in skillet over medium-high heat until it shimmers.
5. Cook burgers until outsides are crisp and golden brown, turning once, about 5
minutes total. Serve on buns.


And a salsa recipe to serve with your burgers...

Cucumber & Tomato Salsa

Ingredients:1 cup chopped fresh tomatoes ½ tsp. salt
½ small cucumber dash pepper
¼ cup chopped onion 2 ½ Tbsp chopped cilantro
1 ½ tsp. cider vinegar

Directions:Cut the cucumber in half.  Remove the seeds with a spoon and dice the remainder.  Combine all
the ingredients in a bowl and mix.  Serve the same day.
