Weekend Warrior Wonders

Hi Everyone!!!!

We are happy it is finally the weekend! Drew is on his way to Ohio for the weekend to spend time with his best friends and celebrate their birthday. I am headed to the lake to try out windsurfing with a couple friends - hopefully I won't fall in the chilly water too many times :)

This weekend the weather is supposed to be nice so I am taking advantage of it as much as possible. I hope to be outside all day today and tomorrow! Tomorrow I am aiming for a long run or bike ride depending on my inspiration. We hope you get outside and do an activity or two you enjoy with friends and family. Maybe try something new like windsurfing or paddle boarding. Make it interesting!!!

If you go out and try something different take a picture of yourself trying it and send it to us.
As always here are the articles we have chosen for you to check out this week. We think you might find them interesting! Enjoy :)

Friday's Get Fit For It Challenge

Hi Everyone!

Are you ready for the weekend??? Before you get to some relaxing, get yourself motivated to push yourself today and try this week's challenge! If you can, do the challenge in addition to your regular planned workout.

Today's Challenge:
Hills!!!! Find a hill and try to get as many repeats as you can! If you don't have a long period of time, see if you can get some hill work in throughout the day. Want to be out in the woods? Find a nice hill/mountain to hike and climb up and down a few times.... still looking for something harder? Run up the trail!

We suggest 3-6 repeats depending on the length of the hill and your intensity. Get up the hill as fast as you can (that means a brisk walk for some of us) and then recover on the downhill. Active recovery is very helpful in training. Remember to stay hydrated and rest for 60-120 seconds between each set.

Good luck and remember to smile as you climb up and come back down!!!!

Gazpacho

Recipe courtesy Alton Brown, 2007
Prep Time:

Inactive Prep Time:

Cook Time:

Level:
Easy
Serves:
4 servings

Ingredients

  • 1 1/2 pounds vine-ripened tomatoes, peeled, seeded and chopped (or canned tomatoes)
  • Tomato juice
  • 1 cup cucumber, peeled, seeded and chopped
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped red onion
  • 1 small jalapeno, seeded and minced
  • 1 medium garlic clove, minced
  • 1/4 cup extra-virgin olive oil
  • 1 lime, juiced
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon toasted, ground cumin
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons fresh basil leaves, chiffonade

Directions

Fill a 6-quart pot halfway full of water, set over high heat and bring to a boil.
Make an X with a paring knife on the bottom of the tomatoes. Drop the tomatoes into the boiling water for 15 seconds, remove and transfer to an ice bath and allow to cool until able to handle, approximately 1 minute. Remove and pat dry. Peel, core and seed the tomatoes. When seeding the tomatoes, place the seeds and pulp into a fine mesh strainer set over a bowl in order to catch the juice. Press as much of the juice through as possible and then add enough bottled tomato juice to bring the total to 1 cup.
Place the tomatoes and juice into a large mixing bowl. Add the cucumber, bell pepper, red onion, jalapeno, garlic clove, olive oil, lime juice, balsamic vinegar, Worcestershire, cumin, salt and pepper and stir to combine. Transfer 1 1/2 cups of the mixture to a blender and puree for 15 to 20 seconds on high speed. Return the pureed mixture to the bowl and stir to combine. Cover and chill for 2 hours and up to overnight. Serve with chiffonade of basil.
Serves 4

We hope you can have some fun with these recipes and make them your own. If you really like a certain fruit or vegetable, switch it out for something or add it in. If you come up with something interesting, post it for all of us to try :)

Happy Thursday!

Motivational Monday!

Happy Monday Everyone!

We hope you had a great weekend! We sure did :) Besides a minor sunburn, the bike ride was a major success and all the hills, both downhill and uphill, were conquered! If any of you did something fun or adventurous, we would love for you to share it with us.

Today is the start to a new week. See if you can get yourself to so something good for yourself you ordinarily wouldn't do, whether it is getting up 30 minutes earlier to do some yoga or a morning workout. With the middle of June coming up, stay focused on your monthly goals!

Weekend Warrior Wonders....

It is finally the weekend!!! You all must feel great after yesterday's lunges :) Hopefully you still have enough power in your legs to get outdoors for some activity today! Maybe a hike, bike ride, run or even a swim! Maybe a fun backyard kickball game or volleyball match! Remember to stay hydrated and wear sun block - be safe about being outside so you can enjoy the nice weather longer :)

Drew is working all day but we have a long bike ride planned for Sunday so we can get outside and get moving. I am hoping to take advantage of the backyard games at a BBQ today! It will be nice to be outside and enjoy summer with friends!
